Native to the Mediterranean Basin, clary sage is a flowering herb that is widely cultivated around the world. While it is a relative of sage, the common cooking herb used in a variety of dishes, especially soups and sauces, clary sage has more of a distinct bitter flavor profile, which separates is use from the more common sage variety. Yet, clary sage is an important ingredient in the wine and spirits world, as its leaves are used to flavor vermouths, wines and digestifs.

Clary sage is also a very popular essential oil, offering a balsamic, sweet-herbaceous aroma with woody undertones. It is thought to induce calmness, work as a natural antidepressant, and alleviate the symptoms of exhaustion and mild pain.
